Kid Recipe: Baked Chicken Schnitzel
A crispy, delicious staple!
As we all know, crunchy, crispy, juicy, salty chicken cutlets are a classic kid fave. I developed this recipe to keep all of the parts that make it universally beloved, but this chicken bakes in the oven rather than in the pan so that it is a bit simpler and to avoid the risk of oil splatter that comes with pan frying.
There is a lot to look forward to and enjoy here! Kids start by paillard-ing the chicken, pounding the pieces until they are thin, to help get a crispy and even cook. I love when cooking feels like a real physical endeavor and expands the bounds of what we think is involved in preparing food — it’s so much more than mixing and cutting.
